
Cook the noodles according to the package instructions.
Add the oil to a large pan over medium-high heat. When hot, add the shallots and garlic. Cook for about 2 minutes, or until lightly golden.
Then add the carrots, bell peppers, and cabbage. Cook for 2 more minutes.
Meanwhile, add all the sauce ingredients to a mason jar. Mix.
When the noodles are cooked, drain and add to the pan of vegetables. Pour the sauce mixture on top and toss to combine.
Serve with the roasted cashews and garnish as desired. Enjoy!
