
Heat the oil in a large pot over high heat. Add the shallots, garlic, and chile, and cook for about 3 minutes, until lightly golden.
Add the remaining ingredients (except for the spinach).
Bring to a boil, then lower to medium-low heat to simmer. Cook, partially covered, until the pasta is al dente, about 15 minutes, stirring occasionally to prevent sticking.
Once the pasta is al dente, stir in the spinach and cook until wilted. Taste and add more salt if you like.
Finish with a squeeze of lemon juice and a sprinkle of thinly sliced basil, if desired. Enjoy!
